Lean Green Salad Recipes

Kale Cucumber & Avocado Salad

  • 2 bunches of Kale
  • 1 Cucumber
  • 1 medium sized Bell Pepper
  • 3 tbsps of Sunflower Seeds
  • 1 Avocado
  • 1 tbsp Lime Juice
  • 1 tsp Agave
  • 1/4 tsp of Sea Salt
  • A dash of Cayenne Pepper
  • Pull the leafy part of the kale from the stem and place it into a salad bowl
  • Chop your cucumber In moderately small pieces and put them into the bowl
  • Slice your bell pepper into long thin slices
  • Add the sunflower seeds to the bowl
  • Add 1 avocado to the bowl
  • Add 1 tbsp of lime juice
  • Add 1 tsp of agave
  • Add a 1/4 tsp of sea salt and a dash of cayenne pepper
  • Use your hands to massage the avocado and seasonings thoroughly into the salad.

Spring Mix Salad

Salad

  • 1 Bunch of Spring Mix
  • 1 Heart of Romaine
  • 1 Cucumber
  • 1 Roma Tomato
  • 1 Carrot
  • 1 Cup of Fresh Cilantro
  • 1/2 cup of Crushed Walnuts
  • 1 Small Avocado
  • 1/2 cup of Raw Sauerkraut

Dressing

  • 1/2 cup of Tahini
  • 1 Lime
  • 1 tbsp of Maple Syrup
  • 1 tbsp of Apple Cider Vineagar
  • 1 tsp of Coriander
  • 1 tsp of Cumin
  • 2 tbsps of Hemp Seeds
  • 1 tbsp of Sesame Seeds
  • 3/4 cup of Water
  • Put all of the ingredients for the dressing into a blender and blend it till its smooth and creamy
  • Chop the greens up really fine and add the to your salad bowl
  • Chop the cucumber up and add it to the bowl
  • Slice the roma tomato into thin slices and add it to the bowl
  • Shred the carrot into the bowl
  • Use a pestle & mortar to crush the walnuts. Then add them to the bowl
  • Cut the avocado in half and scoop chunks of it out into the bowl.
  • Add a 1/2 cup of sauerkraut into the bowl
  • Add a little dressing and mix to your liking
